Honey Mascarpone Fruit Bowl

Most mornings, I typically have coffee milk (café con leche) and toast. However, sometimes I’m in the mood for a bowl of cold, fresh fruit. When I’m in the kitchen all day, everyday, testing and tasting recipes, I want my tummy to take a break. A bowl of fresh fruit and oats is just the thing. Although, a bit of sweet creamy mascarpone with honey isn’t bad either. I know, I know! I’m dairy sensitive…

I don’t always have mascarpone lying around, so this was quite the treat. I only had a taste or two and then my son ate it all up. Lucky kid!

This isn’t a recipe per-se. I mean, pick your favorite fruits, oats, and seeds, then grab the mascarpone and whip it together with a tablespoon of honey. Healthy-ish, right?

I know most people use yogurt, which is also delicious, but there’s just something about the silky creaminess of mascarpone that makes this breakfast more luxurious. There’s no tang to it like there is in yogurt, so I love it.

If you’re feeling heavy from the day before, a fruit bowl helps your digestive system. Besides, with all the pretty fruit in season, how could you not? Fruits are diuretic and have a ton of antioxidants, vitamins, and minerals. Try it. Let’s eat.
